See this unit test for an example: https://github.com/connamara/quickfixn/blob/master/UnitTests/SessionSettingsTest.cs#L240-L278
E.g. you would call sessionSettings.Get(yourSessionId).GetString("StartDay");
In the specific case of StartDay/EndDay, you can additional retrieve these as a System.DayOfWeek with sessionSettings.Get(yourSessionId).GetDay("StartDay");
